Low Carb Cheesy Chicken

OMG.

OMG.

 

This is my new favorite dish in a LONG time. First of all, it’s chicken- my favorite. Second- it has ranch in it. And third, it’s low-carb! I saw this dish on KaseyTrenum.com, and I made a few little tweaks.

In Kasey’s recipe, she has you slow cooking the chicken in a crock pot. I used my Instant Pot (which is the best invention of kitchen history!!!!!!). I got moist shredded chicken using my Instant Pot in only 28 mins!!!!!!! 28! I put a link to the side so you can buy your own Instant Pot. When I tell you this recipe is so delicious even though It’s healthy, I’m not kidding. It has such a great flavor thanks to the ranch mix. I’m going to add some pics below of the process.

 

First you mix the cream cheese, chicken broth (you can actually use the broth from the chicken you just made in your instant pot to be extra healthy!), butter, heavy whipping cream, shredded cheese, and ranch mix on a low heat. I add extra cream cheese and extra HWC because I like my dish a lil more saucy.

 

Then I add the broccoli and cauliflower rice in the pan. I use the steam fresh bags from Birds Eye. The cauliflower is the Savory Herb Riced Cauliflower from Birds Eye as well. (I like quick meals – so I like the convenience of the steam fresh bags. If you want to be extra healthy of course you can chop your own up).  I heat them up in the microwave and then pour it into a little square baking pan.  A little tip I like to do is pour half the sauce on the broccoli and cauliflower, mix it up, and then add the chicken on top and then the rest of the sauce. I feel like it gets a good coat this way. (I also sprinkle a little extra cheese in)

 

Finally sprinkle cheese on top, and a little bacon on the side for my husband- since I don’t like bacon. You’re technically supposed to infuse bacon into the entire dish, but like I said. Blech. lol. Into the oven it goes at 350 for 10 mins or so, and there’s your easy peasy low carb dinner. You could add salad on the side for something extra, but i personally get full off of this right here.

 

It’s so delicious, I’m begging you to try it. I bet your kids will love it, and they won’t even realize how many vegetables they’re actually eating.
